Thanksgiving wild mushroom gravy

A dish that is often overlooked with vegetarians at the table is gravy. Who doesn’t love gravy on their potatoes at Thanksgiving? The problem is that most gravy recipes are meat based. This Thanksgiving wild mushroom gravy is perfect for vegetarians or for anyone who wants to eat a little bit healthier.

Let’s take a closer look at the ingredients in this Thanksgiving wild mushroom gravy.

Black pepper:
It is the most popular spice in the world, and for good reason. It speeds up metabolism, which is great for weight loss. An ingredient in black pepper called piperine inhibits the spreading of rectal cancer cells, according to a study published in Experimental and Molecular Pathology.

Mushrooms:
Looks may deceiving, because these little foods are actually potent superfoods. According to a new study from the University of Florida Institute of Food and Agricultural Sciences, mushrooms are powerful immune boosters.

Onions:
They are potent foods for our heart health, bone health, anti-cancer benefits, anti-inflammatory benefits, and more.

Thyme:
It is packed with antioxidants, and was shown in a study from Natural Product Communications to have anti-cancer properties.

Directions:

Heat about 1 tbsp of olive in a skillet over medium-high heat. Add 1/2 cups of chopped onion. Add 1/4 tsp of sea salt, 1 tsp of dried thyme, and 8 oz of sliced oyster mushrooms. Saute for about 8 minutes or until mushrooms are browned. Add 1/4 cup of dry sherry and reduce until the liquid evaporates. Stir in 3 cups of mushroom or vegetable stock. Bring     mixture to a boil and for about 15 minutes or until gravy is reduced to about 2 cups.

In a small bowl, whisk 1 1/2 tbsp of all-purpose flour and 2 tbsp of water. Add flour mixture to a skillet, and return to a boil. Reduce heat to low and bring to a simmer until gravy is slightly thickened, about 2 minutes. Remove from heat and slowly stir in 2 tbsps of butter, 1 tbsp at a time. Add fresh black pepper to taste.
