Bell peppers:
One cup of bell peppers contains a whopping 120 mg of vitamin C, which is 200 percent of the recommended daily value. This popular vitamin is well known for its heart health properties, antioxidant properties and its ability to bolster the immune system.

Chickpeas:
These legumes are packed with protein, which is an important building block for bones, muscles, are other tissues in the body. They are also high in fiber, which is a nutrient that helps facilitate digestion and helps you feel full, so you eat less. It is the main ingredient in our summer champion chickpea and roasted pepper salad.

Cilantro:
This potent medicinal herb is high in antioxidants, which kill disease-causing free radicals. Free radicals cause oxidative stress, which are linked to serious diseases including cancer and heart disease. Directions:

• First you must roast the peppers
• There are many methods to roast your peppers, but we prefer the grill
• With your grill on medium heat, grill 4-5 peppers for about 20 minutes
• Remove from grill when peppers are charred and soft, falling apart
• Rinse a can of chickpeas and add to a bowl
• Roughly chop the roasted peppers and add to the bowl as well
• Add a handful of chopped cilantro and 3 chopped green onions
• Add 1/2 a lemon juiced
• Add 3 tbsp of olive oil
• Season to taste with Himalayan salt and black pepper
• Toss the salad to mix the ingredients
• Serve!
