Bell peppers:

Chickpeas:

Cilantro:

Directions:

• First you must roast the peppers
• There are many methods to roast your peppers, but we prefer the grill
• With your grill on medium heat, grill 4-5 peppers for about 20 minutes
• Remove from grill when peppers are charred and soft, falling apart
• Rinse a can of chickpeas and add to a bowl
• Roughly chop the roasted peppers and add to the bowl as well
• Add a handful of chopped cilantro and 3 chopped green onions
• Add 1/2 a lemon juiced
• Add 3 tbsp of olive oil
• Season to taste with Himalayan salt and black pepper
• Toss the salad to mix the ingredients
• Serve!
