Pumpkin chocolate chip oatmeal cookies

Fall is here and one of our favorite things about this season is pumpkins. They are so delicious in pies, cookies and other desserts. These pumpkin chocolate chip oatmeal cookies are made with much healthier ingredients than store-bought cookies.

Let’s take a closer look at the ingredients.

Cinnamon:
This potent spice is packed with health benefits. It boosts brain function, protects against heart disease because of calcium and fiber, regulates blood sugar, and provides antimicrobial benefits. Plus it tastes great!

Nutmeg:
It has been used since ancient times for its ability to boost brain function, relieve pain and indigestion, and detox the liver and kidneys.

Pumpkins:
They are a staple during Halloween, and provide great health benefits. Pumpkins are packed with vitamin A, which is great for our eyes, vitamin C, which is great for the immune system, and beta-carotene, which is great for our skin and eyes.

Directions:

1. Preheat the oven to 325 F, and put parchment paper on your baking sheet

2. Whisk together 1 cup of instant oats, 3/4 cup of gluten-free flour, 2 1/2 tsp of cinnamon, a dash of nutmeg, a dash of ginger powder, a dash of clove powder, 1 1/2 tsp of baking powder and 1/4 tsp of sea salt in a bowl

3. In another bowl, whisk 2 tbsp of coconut oil, 3/4 cup of pumpkin puree, and 1 tsp of vanilla extract. Stir in 1/2 a cup of organic maple syrup or coconut nectar. Add this mixture into the flour mixture in the other bowl and stir until incorporated. Do not over stir.

4. Fold in 2 tbsp of organic dark chocolate chips

5. Make 15 rounded scoops with the dough and place on your baking sheet, flattening to your desired size and shape with a spatula

6. Place in the oven and bake for 11-14 minutes. Once cooked, let cookies cool for 10 minutes.
