Antioxidant packed chickpea and onion soup

Soup, like smoothies and juices are a great way of combining multiple healthy ingredients into one. This makes soups a very convenient food, and keeps the health benefits alive and potent. This antioxidant packed chickpea and onion soup is loaded with legumes, vegetables, and fresh herbs to promote optimal health. Let’s take a look at the following ingredients.

Black pepper:
It is the most popular spice in the world, and for good reason. It speeds up metabolism, which is great for weight loss. An ingredient in black pepper called piperine inhibits the spreading of rectal cancer cells, according to a study published in Experimental and Molecular Pathology. Black pepper also helps enhance turmeric absorption.

Chickpeas:
These legumes are packed with protein, which is an important building block for bones, muscles, are other tissues in the body. They are also high in fiber, which is a nutrient that helps facilitate digestion and helps you feel full, so you eat less.

Garlic:
This herb is a potent healing medicine. It has strong anti-inflammatory properties and is even known to reduce the inflammation caused by arthritis.

Kale:

Rosemary:
This potent herb has shown many benefits, including anti-inflammatory properties, anti-cancer benefits, and memory protection.

Directions:

Heat a large saucepan on medium-high heat
Add 1 tbsp of olive oil and spread around pan
Add 1 chopped red onion and sautee until tender
Add 3 cloves of minced garlic, 2 sprigs of fresh rosemary, and a few pinches of salt
Cook for 3 minutes
Add 4 cups of chicken or vegetable stock
Add 1 cup of chickpeas
Add 3 cups of chopped kale
Bring to a simmer for 5 minutes
Remove from heat and serve
