Avocados:

Shrimp:

Directions:

. Bring a saucepan with water to a boil
. Boil 8 shrimp, 2-3 minutes for smaller shrimp, 5-7 for larger ones
. Lightly heat 4 tortillas on a medium-heat skillet for about 30 seconds
. Scramble 4 eggs with olive oil, or coconut oil if you prefer
. Add eggs to your tortillas, and top with diced tomatoes, avocado, and the shrimp
. Season to taste with Himalayan salt and fresh black pepper
. Serve immediately with lime wedges
