This protein packed Indian vegetarian spicy chickpea curry is a delicious recipe if you want to avoid meat but still want the amazing benefits of protein.

Indian food has some of the best vegetarian cuisine in the world. It’s so good that you won’t even miss eating meat.

Chickpeas are a staple in India because they are packed with flavor and protein.

Let’s take a look at how to make this protein packed Indian vegetarian spicy chickpea curry.

Ingredients:

1 onion, chopped
1 tomato, chopped
1 inch piece of ginger, chopped
3-4 cloves of garlic, chopped
Olive oil
2 bay leaves
1 tsp of chili powder
1 tsp of coriander powder
1 tsp of garam masala
1/2 tsp of turmeric
1 can of chickpeas
1 handful of cilantro
1 green chili, chopped and seeded

Directions:

1. Blend the onion, tomato, ginger, garlic, and chili in a food processor until it turns into a paste.

2. Heat 3 tbsps of olive oil in a large skillet over medium heat. Add bay leaves and fry until fragrant–about 30 seconds. Add the paste you made in the first step to the skillet and cook for about 2-3 minutes until it becomes golden brown. Add chili powder, coriander, powder, gram masala, turmeric, and salt. Stir and cook for about 2-3 more minutes.

3. Slowly add water until a gravy starts to form. Bring the mixture to a boil and stir. Reduce heat to medium and cook for about 5-7 more minutes until the chickpeas are heated through.

4. Serve with cilantro and a spoon of yogurt.
