Healthy rosemary and garlic roasted potatoes

These healthy rosemary and garlic roasted potatoes are the perfect addition to a clean, organic, and delicious Thanksgiving holiday meal.

Potatoes are a healthy food that sometimes gets a bad rap. They are often deep fried and combined with trans fats and excess sodium, which can make them detrimental to health. But when prepared right they can be very nutritious.

Let’s take a closer look at these healthy rosemary and garlic roasted potatoes.

Black pepper:
It is the most popular spice in the world, and for good reason. It speeds up metabolism, which is great for weight loss. An ingredient in black pepper called piperine inhibits the spreading of rectal cancer cells, according to a study published in Experimental and Molecular Pathology.

Garlic:
This herb is a potent healing medicine. It has strong anti-inflammatory properties and is even known to reduce the inflammation caused by arthritis.

Himalayan salt:
It is an unprocessed, unrefined, and raw salt, packed with many essential ingredients like nature intended.

Olive oil:
It has a wide variety of polyphenols, which are substances found in olive oil (and many other foods) that help reverse pro-inflammatory enzymes and molecules in the body. Just 1-2 tablespoons of olive oil a day can help with inflammation.

Potatoes:
Contrary to popular belief, potatoes are very nutritious. They are high in vitamin C, B6, potassium, and iron. They have been shown to help lower blood pressure.

Rosemary:
This potent herb has shown many benefits, including anti-inflammatory properties, anti-cancer benefits, and memory protection.

Ingredients:

2 pounds of red potatoes, quartered
2 tbsp of olive oil
3 cloves of garlic
2 tbsp of rosemary, chopped
Himalayan pink salt
Black pepper freshly ground
1 tbsp of red wine vinegar

Directions:

Preheat your oven to 400 degrees F. Toss potatoes on a baking sheet in the olive oil, garlic, rosemary, salt and pepper to taste, and red wine vinegar.

Roast for about 1 hour. At half an hour, take potatoes out and very lightly press on potatoes with a masher to open them up a little bit. Make sure not to damage them too much. Then put them back in the oven for the remaining time. This will help them get crispy.

Remove from oven and add more rosemary, thyme, and other fresh herbs that you like.
