Lentils:
They are potent legumes with inflammatory benefits. Dr. Weil, a leading physician and health expert recommends 1-2 servings of lentils per day.

Tomatoes:
They are high in a compound called lycopene, which has potent anti-inflammatory properties.

Turmeric:
Turmeric is the most powerful healthy spice in the world. Its health benefits are endless. A recent study showed that turmeric was better at relieving arthritis than ibuprofen.

Directions:

First, you must cook the lentils

Bring 3 cups of water to a boil and add 1 cup of lentils
Bring water to a simmer and cook for 15-20 minutes until lentils are soft
Let the lentils cool

Add 2 cups of chopped kale to a bowl
Add a handful of cherry tomatoes
Add 1 tsp of turmeric
Add 1 tsp of cayenne pepper
Add the juice of half a lemon
Add a pinch of Himalayan pink salt
Once lentils are cool, add to the bowl as well
Drizzle with olive oil and vinegar and toss ingredients in the bowl to mix
